Cookie #1: Almond Butter Blossoms

Here it is, cookie recipe numero uno.  I did not do these in order of my list, I started with the one I wanted first, it's my blog, I do what I want!  I spent a lot of time on my challenge over the weekend, I also made the Magic Bars, Chocolate Cherry Bars and Pumpkin Macaroons.  The macaroons are ready to go.  The other two I will have to make a few small tweaks to the recipe.  Ian was in heaven when he tried the cherry bars, but I think they could be better.  Please keep in mind that I am not consuming all these cookies myself.  I brought the entire batch of almond butter blossoms over to my friend Lauren's house yesterday so she and her husband could give me their opinions.  I didn't bring any back, so I am taking that as a good sign.
Note: You can use any type of chocolate you want for the top of these, I chose the Enjoy Life Mega Chunks since they are easily accessible.
Almond Butter Blossoms
(Print Recipe)
Yield: 14 Cookies
1 cup Almond butter
1/4 cup Coconut palm sugar
1 Egg
1 tsp Vanilla extract
1 tsp Baking soda
1/4 tsp Salt
42 Enjoy Life Mega Chunks (3 per cookie)

Preheat oven to 350 degrees.  Line a large baking sheet with parchment paper.
In a mixing bowl, combine all ingredients except for chocolate.  Roll heaping tablespoons (or 1 oz cookie scoop) of dough into a ball, place on baking sheet and gently press down with your fingers.  Bake for 8 minutes, remove from oven and immediately press 3 chocolate chunks into each cookie.  Enjoy warm or let chocolate cool and harden before storing.
