Happy Foodie Friday-ish! Now I realize it is now Saturday, but I have a good one for you today. I have been craving pizza ever since I saw the commercials for the Pizza Hut P’zolo, like, bad. I was in Sprouts yesterday after work, roaming the aisles like I always do for new foods and inspiration. Just as I was turning for the check-out, something caught my eye. A small box with a picture of a pizza on it, pizza crust mix, on a shelf with a bunch of gluten free items. I thought twice before heading over, since I am usually let down by gluten free stuff, but I decided to take a chance. Boy am I glad I did! (Disclaimer: I treat this as a cheat meal) The product is called Chebe and it’s made from cassava, aka tapioca, manioc, whatever you want to call it. It is very popular in Brazil. There is some debate in the paleo world about the paleo-ness of tapioca flour/cassava starch, but I found some articles that suggest if you are an active person and can handle the carb load, that it is fine, in moderation of course. I suggest you do some reading for yourself before trying it. I find my thinking is in line with Mark, over at Mark’s Daily Apple, so I usually consult his site for guidance.
Chebe makes a variety of products, I picked up the Pizza Crust mix and the Cinnamon Roll mix. I followed the directions for the crust and topped it with fresh tomato, grilled chicken, sliced onions and raw cheddar cheese. The results totally satisfied my pizza craving!
