Re-purpose Recipe: Taco Slider Scramble

I never ate leftovers before I started paleo. I didn't like the idea of eating the same meal over and over.  But now, I am pretty much required to eat leftovers unless I want to cook a whole other meal, three times a day.  What I've found is if I can make a leftover into something else, it doesn't seem like a leftover, it's something new.   I like new things.  I need to stop here for a moment, I can't take 100% credit for this dish.  Ian actually made it. Yes, correct, IAN made it!  He does cook, a skill he tries to keep secret, but he knows his way around the kitchen.  And this dish isn't rocket science, it's just another recipe for breakfast, and who can't use more of those?  Re-purpose your leftover taco sliders into a delicious breakfast, now that's a leftover I can get behind.  
Note: This recipe is for 2 servings, adjust as necessary.  Ian topped his with a few shreds of raw cheddar cheese.

Taco Slider Scramble

2 Taco Sliders, chopped
1/2 White onion, chopped
1/2 Green bell pepper, chopped
1/2 Red bell pepper, chopped
4 Eggs
Salt & pepper
Coconut oil

In a small bowl, whisk eggs together, season with salt and pepper.  Melt a dab of coconut oil in a large saute pan over medium heat.  Add veggies and saute for 4-5 minutes. Add chopped sliders and cook for 1 more minute.  Add eggs to pan and keep them moving until cooked through. Serve with some salsa if you have that leftover as well.
